For a little fun in the kitchen, try this trick with a butternut squash. Wash the skin and cut off the long neck of the squash. Using a cheese grater, grate the squash using the large holes on the grater. You can grate up the bulb of the squash as well. Mix up a salad dressing with raw - apple cider vinegar, organic - extra virgin olive oil, vanilla and cinnamon. Optional spices to your heart and taste bud's desire: ginger, cardamom, nutmeg. Drizzle or slather the grated squash with this dressing. Enjoy your raw, winter salad.
Another hint: add raw, grated beet for a different winter salad sensation.
