OK, we are back to that butternut squash. No, I have not tossed aside my beloved beets for a vine growing fruit!
Making squash "lasagna" noodles!
Take your butternut squash and cut off the long neck. Cut the neck in half, length-wise.
If the squash is large, cut the half again, length-wise. You now have long quarter sections.
Using a sharp knife, cut off thin slices of the squash to use in place of lasagna noodles.
When you have cut what looks like enough thin slices, begin piecing your lasagna together.
Tomato sauce on the bottom of the pan, squash slices, a layer of Italian spiced meat or beans, more sauce, another layer of squash slices, Italian spiced feta cheese* (or ricotta cheese), more sauce, more squash slices, more sauce.....
Bake, covered, at 350 F until bubbly. Remove from oven.
Add grated mozzarella or provolone cheese to the top and return to the oven for 5 minutes to melt the cheese.
Enjoy your squash "noodle" lasagna!
I mash the feta up with garlic, basil, oregano, thyme, rosemary and parsley.
